Italian Specialty Chef

About the role

We are seeking a creative and experienced Italian Specialty Chef to join the culinary team at Grand Palladium Jamaica & Lady Hamilton Resorts & Spa. The role focuses on delivering authentic Italian dishes while maintaining the highest standards of quality, presentation, and food safety.

Key responsibilities

• Lead and supervise the kitchen team, ensuring efficient operations and high-quality food preparation.
• Oversee the preparation and presentation of authentic Italian dishes, sauces, and pastas, ensuring consistency with the restaurant concept.
• Coordinate daily mise en place, production processes, and service readiness.
• Manage raw materials, inventory, storage, and purchasing requests using the PEPS/FIFO system.
• Ensure compliance with food safety, hygiene, temperature control, and Distinctive H standards.
• Monitor kitchen equipment and report maintenance needs to the Executive Chef.

Required profile

• Degree in Gastronomy, Culinary Arts, or Food & Beverage.
• 3–5 years of experience as a Chef de Partie, Specialty Chef, Sous Chef, or Assistant Chef.
• Advanced knowledge and experience in Italian cuisine.
• Proven team leadership and staff management skills.
• Ability to work under pressure in a dynamic hospitality environment.
