Specialist Italian Sous Chef – Luxury Resorts in Jamaica & St Lucia

About the role

This position is for a Specialist Italian Chef (Sous Chef level) working in luxury resort properties in Jamaica and Saint Lucia. The role suits a strong Sous Chef with experience in high‑end restaurants, hotels or resorts, focusing on consistency, execution and leadership while delivering authentic Italian cuisine.

Key responsibilities

• Execute established Italian menu items to consistently high standards.
• Lead and manage kitchen teams throughout service.
• Maintain consistency, presentation and quality across all dishes.
• Collaborate with the Executive Chef and Executive Sous Chef on daily operations.
• Train, mentor and develop junior culinary team members.
• Uphold exceptional standards of cleanliness, organisation and food safety.
• Support ordering, preparation management and operational controls.

Required profile

• Currently operating at Sous Chef level or above, or previous experience as a Specialist Italian Chef.
• Strong background in Italian cuisine.
• Experience within a high‑end restaurant, luxury hotel or resort environment.
• Hands‑on leadership style with the ability to motivate and develop a team.
• Exceptional attention to detail and high personal standards.
• Calm under pressure with strong communication skills.
• Strong English communication skills; international or Caribbean experience is an asset.
